Emily's Super Easy Roasted Vegetables
Cut into large chunks:
Red Pepper
Green Pepper
Yellow or Orange Pepper
Mushrooms
Zucchini
Crookneck Squash
Sweet Yellow Onion
Baby Carrots (leave them whole)
Toss them in olive oil, Italian seasoning, lemon pepper and garlic salt and roast (375 degrees) in a single layer for 45 minutes or until al dente. At the end you could even sprinkle a little parmesan and broil for a second.
So easy and yet so good!
