Aunt Becky's Crazy-Good Chicken Salad
3 Chicken thighs
Chicken broth
1/2 c. Chopped celery
1/4 c. Chopped red onion
1/4 c. sliced almonds
1/2 c. mayo
Trader Joe's Raspberry Balsamic Consorzio
2 T. raisins
salt/pepper
1. Put thighs in broth and simmer until done (about an hour).
2. Remove and cut up into bite size pieces. Remove fat.
3. Add celery, onion, almonds, mayo, consorzio, dried fruit, salt & pepper.
4. Add chicken once it cools. Mix and chill 1 hour minimum.
5. Serve on celery sticks, halved avocados, or french bread. Or, as my aunt says, "on your head".
